Healthy Banana & Raspberry Pancakes

In today’s post we’re bringing back the humble pancake – but better.  Quick, healthy and yummy clouds of deliciousness you can whip up in under 10 minutes.  They’re 100% gluten and dairy free ! A great option to nourish your body quickly and healthily!

Raspberry & Banana Pancakes

Preparation Time: 5 minutes
Total Time: 10 minutes
Servings: Serves 2

Ingredients:

  • 2 large bananas (ripe)
  • 4 large eggs
  • 1/2 cup finely desiccated coconut
  • 1 cup fresh raspberries
  • 1 teaspoon cinnamon
  • Seeds from 2 vanilla beans
  • A little oil
  • Dollop of natural or coconut yogurt

How to make it:

  • Whisk eggs in a medium sized bowl
  • Mash bananas, then add to whisked eggs and stir1⁄4 cup fresh berries
  • Add raspberries, coconut, cinnamon, vanilla and stir again
  • Heat a little oil in a fry pan on medium heat
  • Cook pancakes 2 at a time, until both sides are golden
  • Serve with more fresh berries and a dollop of natural or coconut yogurt
